Mexican(ish) Scrambled Eggs

(makes 2 servings)

In the Eggs

  • 5 Large Eggs
  • 1/4 Sweet onion, diced
  • 1/2 Tomato, chopped
  • Fresh Cilantro Diced, add to taste

Saute all the veggies in a pan until soft and slightly browned. Whisk eggs until smooth and then pour over veggies, SCRAMBLE!

On the Eggs

  • Cheddar Cheese, grated
  • more cilantro, if you want
  • 1/4 Avocado, sliced
  • Salsa (home made or other – I used an AMAZING red pepper salsa that Jeff’s mom gave me for Christmas, YUM)

This is one of my all time favorite breakfasts, amazingly tasty, and super duper easy.
