
So this has been the recipe of the month for me. I have been making it about once a week and it lasts a couple days (depending). I’m not sure where the recipe comes from, most of my cooking takes place in a confusing, not sure what i have in the kitchen, kind of state.
Anyway I don’t really measure things out but here is a basic idea of what goes in, and I make it different every time so… just toy with it until you like what it tastes like.
Base:
- 1/2 cup Red lentils
- 1 1/2 cup water
- 1 can chopped tomatoes
- 1 small red onion
- 2 cloves garlic
Additional options
- 1 carrot
- stick of celery
- kale
- couscous
- rice
Spices
- 1/2 tsp Garahm Masala
- 1 tsp coriander powder
- 1 tsp salt
- 1/2 tsp turmeric
- 2 bay leaves
like I said this is a BASIC recipe, and can be toyed around with a lot, add water if you think you need some.
In this soup, I didn’t use the garahm masala, and used kale and israeli couscous. I like the spicy one better but Jeff was into this one. Make sure you add more water if you use couscous or rice.
